Spatchcocking a chicken - Mr. Libido Incognito

1. Cut on either side of back bone
2. Remove the back bone
3. Turn the bird over and spread it out as much as possible
4. Press down hard on the breast bone to make the bird stay flat... or give it a good solid blow or two with the heel of your palm.

Voila! you now have spatched your chicken.
