Easy Cheese Biscuits

1/4 cup butter or margarine, softened
2 cups Self-rising flour
1 cup Buttermilk
1 1/2 cups Cheddar cheese, regular or reduced fat, Grated
Preheat oven to 425°F. Grease a large baking sheet and set aside. Use a
pastry blender to cut butter into flour until it resembles corn meal; add
remaining ingredients and stir only enough to moisten ingredients and mix in
cheese. DO NOT OVERMIX! Drop by rounded tablepoons, 2 inches apart, on baking
sheet and bake 12-15 minutes or until golden brown.
Note: I use Kraft Cracker Barrel Extra Sharp Cheddar Cheese.

1 1/2 cups heavy cream
2 tablespoons unsalted butter
18 ounces semisweet chocolate, chopped into 1/2 - ounce pieces
Heat the heavy cream and the butter in a 3-quart saucepan over medium high
heat. Bring to a boil. Place the semisweet chocolate in a 3-quart stainless
steel bowl. Pour the boiling cream over the chocolate and allow to stand for 5
minutes. Stir until smooth.
